Ingredients

  • 4 cups cranberry juice
  • 4 cups pineapple juice
  • 1 cup silver rum
  • 1 cup coconut rum
  • 2- liter ginger ale
  • juice of 1-2 limes
  • Garnish
  • 2 limes sliced (plus more for glasses)
  • 1 cup fresh cranberries frozen

Instructions

  1. combine cranberry juice, pineapple juice, silver and coconut rum, and lime juice in a pitcher
  2. add lime slices and fresh cranberries to the pitcher
  3. top off with ginger ale or just add directly to a glass when serving
  4. enjoy!

Ingredients

  • CRUST
  • 1/4 cup butter, melted
  • 24 Oreo cookies
  • PIE
  • 1/2 tsp vanilla extract
  • 4 Oreo cookies, crushed (optional)
  • 1/2 cup heavy whipping cream
  • 2 Tbsp powdered sugar
  • 1/2 gallon ice cream (chocolate or coffee)
  • 1/3 cup chocolate sauce

Instructions

  1. For crust, preheat oven to 350°.
  2. Finely crush Oreo cookies in a food processor. Add the melted butter and mix till well combined. Press into the bottom and up the sides of a 9" pie pan.
  3. Bake crust for 8-10 minutes. Cool completely, then place in the freezer
  4. Scoop ice cream into a cake pan or bowl, chop and stir till smooth. Spread into the crumb crust. Cover and freeze for several hours.
  5. When ready to serve, beat whipping cream in a small bowl till soft peaks form. Beat in powdered sugar and vanilla.
  6. Drizzle pie with chocolate sauce, then top with whipped cream and additional cookie crumbs if desired.

Ingredients

  • 1 cup quinoa (dry, uncooked)
  • 2 medium avocados
  • 3 oz. baby spinach (more as desired)
  • 8 oz. cherry tomatoes
  • 3 green onions (or finely diced red onion)
  • 1-2 cloves garlic (I use 2)
  • 2 Tbsp. red wine vinegar
  • 1/8 tsp. salt

Instructions

  1. Rinse and cook quinoa according to package directions.*
  2. Meanwhile, roughly chop the spinach. Place in a large bowl.
  3. Mince garlic, and add to spinach.
  4. Slice the green onions, halve the cherry tomatoes, and dice the avocado.
  5. When quinoa is done cooking, add it to the large bowl with spinach and toss. (The heat from the quinoa will lightly wilt the spinach and mellow the garlic.)
  6. Add the green onions, tomatoes, red wine vinegar, and salt. Stir to combine.
  7. Add the avocado and lightly toss.
  8. Serve immediately or refrigerate to let flavors blend more.

Ingredients

  • Salt and freshly ground pepper
  • 1 small onion sliced
  • 1/4 cup Pecorino cheese grated, packed or Parmesan
  • 3 large tomatoes sliced, about 9 slices
  • Fresh basil sliced, for garnish
  • 1 sheet all-butter puff pastry thawed
  • 1 clove garlic sliced
  • 1 cup ricotta cheese
  • 1 Tbsp olive oil plus more for drizzling


Instructions

  1. Preheat oven to 400F and place a baking sheet in the oven to warm while the oven heats up.
  2. Heat 1 Tbsp olive oil in a skillet over medium heat. Add the sliced onion and garlic and cook, stirring regularly, until the onion softens and begins to colour. Add about 1 Tbsp water to the pan and stir. Allow to cook, stirring regularly and adding a splash more water as needed, along with a pinch of sugar, until the onions are caramelized. Remove caramelized onions to a clean plate to cool 5-10 minutes before proceeding.
  3. Place thawed puff pastry sheet on a sheet of parchment paper. Scatter caramelized onions and garlic evenly over pastry, leaving about 1/2-3/4 inches of the edges bare. Spoon dollops of ricotta cheese overtop and then season ricotta lightly with salt and pepper. Sprinkle evenly with Pecorino cheese. Top with tomato slices, covering the top, overlapping just slightly (about 9 slices). Season tomatoes with salt and pepper then drizzle lightly with a bit more olive oil.
  4. Remove hot baking sheet from oven. Carefully transfer tart, on parchment, onto the hot baking sheet. Place into the 400F oven and bake for 20 minutes. Remove from oven and carefully pull the parchment paper out from under the tart. Return to the oven and bake another 3-5 minutes, or until the underside and edges are golden.
  5. Remove from oven and allow to stand 5-10 minutes. Scatter sliced fresh basil over-top. Slice and enjoy!

Ingredients

  • 1/2 lb. pizza dough {I used my fail-proof recipe}
  • 1/2 cup pizza sauce
  • 1 1/2 cups grated mozzarella cheese
  • 9 slices salami
  • 7 slices deli honey ham
  • 1 egg beaten
  • dried parsley & parmesan cheese {optional}
  • extra pizza sauce for dipping {optional}

Instructions

  1. Preheat oven to 500 degrees. Line large rimmed cookie sheet with parchment or spray lightly with non-stick cooking spray.
  2. Spread pizza dough out on baking sheet to be approximately 10x16. Spread pizza sauce over 2/3's of the dough lengthwise, leaving a 3x16 rectangle of plain dough along one of the edges. Top sauce with half the grated cheese, salami and ham. Top with remaining cheese.
  3. Brush the plain strip of dough with the egg. Fold in the sides about an inch and brush them with egg. Roll up like a jelly roll lengthwise starting along the long edge of dough topped with all the fillings and ending with the plain strip of dough on the bottom of the roll.
  4. Brush the entire stromboli with egg and gently cut slats in the top of the dough every 1-2 inches. Sprinkle parsley and cheese over top and bake in the lower third of the oven for 8-10 minutes or until bubbly and golden.
  5. Remove from oven, cool 5 minutes and slice into pieces. Serve with more pizza sauce.
