Ingredients

  • 16 Ounces Uncooked Elbow Macaroni
  • 4 Cups Chicken Broth
  • 2 Tablespoons Butter
  • 1 Teaspoon Hot Pepper Sauce
  • 1 Teaspoon Garlic Powder
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Salt
  • 2 Cups Shredded Cheddar Cheese
  • 1 Cup Shredded Mozzarella Cheese
  • 1/2 Cup Shredded Parmesan Cheese
  • 1/2 -1 Cup Milk

Instructions

  1. Add the uncooked macaroni, chicken broth, butter, hot sauce, garlic powder, pepper, and salt to the Instant Pot.
  2. Place the lid on the pot and set to sealing. Cook on manual function, high pressure for 5 minutes. Then, do a quick release.
  3. Stir in the cheeses and milk until smooth. Season as necessary to taste.

Ingredients

  • 2 cups milk non-fat, reduced fat or whole milk
  • 1 1/3 cups flour
  • 4 eggs
  • 1/4 cup vegetable oil
  • 1 tbsp sugar
  • 1/3 tsp salt
  • butter for greasing the pan

Instructions

  1. Mix well (or blend) all the ingredients together, excluding the butter.
  2. Heat a lightly-buttered frying pan over a medium-high heat.
  3. Pour the batter onto the pan, using about 1/4 of a cup for each scoop.
  4. Tilt the pan and rotate it with a circular motion to help the batter spread evenly.
  5. Cook for about 1 minute per side on medium heat. Repeat until the batter is finished.

Ingredients

  • 2 Tablespoons coconut oil
  • 1 onion finely chopped
  • 3 cloves garlic thinly sliced
  • 2 Tablespoons freshly grated ginger about a 5cm piece
  • 2 teaspoons medium curry powder
  • 1 teaspoon ground turmeric
  • 10 - 15 fresh curry leaves
  • 400 ml (13 ozs) coconut milk
  • 2 medium tomatoes roughly chopped
  • 1 teaspoon salt
  • 600 g (21 oz) firm white fish cut into 3cm chunks
  • 20 g (1 cup) chopped fresh coriander (cilantro)
  • 1/2 lime juiced

Instructions

  1. Melt the coconut oil in a medium saucepan.
  2. Saute the onion for about 5 minutes over a medium heat until translucent and just starting to brown.
  3. Add the garlic and ginger, and cook, stirring gently for 1 minute.
  4. Add the curry powder, turmeric and curry leaves, and cook, stirring for a further minute until the mixture is fragrant.
  5. Slowly stir in the coconut milk, scraping up the spices and onion from the bottom of the saucepan. Bring the pan to a gentle simmer.
  6. Add the chopped tomato, and continue to simmer for about 5 minutes or until the tomato begins to soften.
  7. Add the fish and the salt to the sauce, and gently poach for about 6 - 8 minutes, or until the fish is cooked.
  8. Gently stir in the coriander and lime juice.
  9. Serve.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (6 ounce) carton raspberry yogurt
  • 1/3 cup canola oil
  • 1 egg
  • 1 cup raspberries



Instructions

  1. Preheat oven to 400 degrees F.
  2. Spray, grease or put paper liners in 12 (2 3/4 inch) muffin cups.
  3. In a medium mixing bowl, stir together dry ingredients.
  4. In a small bowl, beat together yogurt, oil and egg.
  5. Stir yogurt mixture and raspberries into dry mixture until almost blended.
  6. Add raspberries and stir until batter is just blended. Do not over mix.
  7. Spoon into prepared muffin cups.
  8. Bake until nicely browned, about 20 minutes.

  • For the chocolate cake layers
  • 1 1/2 cups granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup cake flour
  • 1 cup cocoa powder unsweetened
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup unsalted butter softened
  • 4 eggs large
  • 1 cup plain Greek yogurt or sour cream
  • 2 teaspoons vanilla extract
  • For the cocoa simple syrup (optional)
  • 1/2 cup granulated sugar
  • 1 tablespoon cocoa powder unsweetened
  • 1/2 cup water

Instructions

  1. To make the chocolate cake layers:
  2. Preheat the oven to 325 degrees F.
  3. Generously mist three 8-inch diameter by 2-inch high cake pans with non-stick spray, and line with circles cut from parchment paper.
  4. Place the sugar, flours, cocoa, baking powder, baking soda, and salt in a large mixing bowl, and whisk to combine.
  5. Cut the butter into smaller pieces and add it to the dry ingredients.
  6. Mix on low speed until the mixture resembles damp sand (30 seconds to a minute).
  7. Add the eggs, one at a time, scraping the bottom and sides of the bowl with a silicone spatula after each addition.
  8. When all of the eggs are fully incorporated, add the Greek yogurt (or sour cream) and vanilla, and beat on medium speed for about 60 to 90 seconds, to aerate the batter and strengthen the cake's structure.
  9. Divide the batter evenly between the three prepared pans, and bake for 30-40 minutes, or until a toothpick inserted in the thickest part of the cake comes out clean or with one or two moist crumbs.
  10. Cool completely, then soak with cocoa simple syrup (optional), and fill and frost.
  11. To make the cocoa simple syrup (optional):
  12. Place the sugar and cocoa powder in a small pot and whisk to combine.
  13. Stir in the water and place over medium heat.
  14. Cook, stirring occasionally, until all the sugar has dissolved.
  15. Place one cake layer on a serving platter. Use a pastry brush to soak the cake with the simple syrup before topping with filling. Repeat as you add each layer.

Ingredients

  • 1 Tablespoon Olive Oil
  • 3-4 Large Chicken Breasts
  • Salt
  • Pepper
  • 2 cloves Garlic (minced)
  • 1 teaspoon Thyme
  • 1 teaspoon Red Pepper Flakes (may add only 1/2 teaspoon for less spice)
  • 3/4 cup Chicken Broth
  • 1/2 cup Heavy Cream
  • 1/2 cup Sundried Tomatoes (chopped)
  • 1/4 - 1/2 cup Freshly Grated Parmesan Cheese
  • Fresh Basil

Instructions

  1. Preheat oven to 375 degrees.  In a large oven-safe skillet heat oil over medium-high heat.  Season chicken generously with salt and pepper and sear until golden, about 4-5 minutes per side.  Transfer chicken to a plate. 
  2. Return skillet to medium heat.  Add garlic and cook for 1 minute. Stir in thyme, red pepper flakes, chicken broth, and heavy cream.  Cook for 5 minutes, stirring often.  Stir in sundried tomatoes and parmesan cheese.  
  3. Return chicken to skillet and spoon sauce all over the chicken breasts.  Bake until chicken is cooked through -- about 15-18 minutes.  Garnish with basil and grated parmesan cheese, if so desired.

Ingredients

  • 1¼ pounds salmon fillet
  • 2 tablespoons lemon juice
  • 2 cloves garlic — minced
  • 3 tablespoons melted butter or melted ghee
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried oregano
  • ¼ teaspoon crushed red pepper
  • 1 tablespoon chopped parsley — for garnishing
  • lemon slices — for garnishing

Instructions

  1. Preheat oven to 375ºF. Line a baking sheet with foil. The piece of foil should be large enough to fold over and seal the fish.
  2. In a small bowl, add lemon juice, garlic, and melted butter or melted ghee. Whisk everything together.
  3. Place the salmon on the prepared baking sheet.
  4. Pour the butter mixture over the salmon.
  5. Season with salt, pepper, oregano, and red pepper flakes.
  6. Fold the sides of the foil over the salmon. Make sure it is well sealed so that the sauce does not leak.
  7. Place the pan into the oven, and bake until cooked, about 12-16 minutes. The cooking time depends on the thickness of the fillet.*
  8. Open the foil, and broil the fish for 2-3 minutes. Be careful not to burn the fish!
  9. Remove from the oven. Using a spoon, pour some of the butter sauce left in the foil onto the salmon before serving. Then, garnish with parsley.

Ingredients

  • 8 oz angel hair pasta
  • 4 cloves garlic 
  • 1/2 bunch green onions 
  • 4 Tbsp butter 
  • 2 tsp soy sauce 
  • 2 Tbsp brown sugar 
  • 1 tsp sesame oil 
  • 2 Tbsp oyster sauce 


Instructions

  1. Add the oyster sauce, brown sugar, soy sauce and sesame oil to a bowl and stir until combined.
  2. Bring a large pot of water to a boil and cook the noodles according to the package directions (boil for 7-10 minutes). Drain the cooked noodles in a colander, then set aside.
  3. While the pasta cooks, mince the garlic and slice the green onions. Melt the butter in a large skillet over medium-low heat. Once the butter is melted and bubbly, add the garlic and onions (save a few for garnish) and sauté until they are soft and fragrant (1-2 minutes).
  4. Remove the skillet from the heat. Add the drained pasta and oyster sauce mixture to the skillet, and stir well to coat the pasta. If your pasta is stiff or sticky making it hard to stir, sprinkle a small amount of hot water over the pasta to loosen it up. Garnish the pasta with any reserved sliced green onions, then serve.
